Chicken Picata Recipe
This recipe takes about 15 minutes to prepare and another 15 minutes to cook and can serve 4 people.
- 2 chicken breasts without the bone, cut lengthwise in two or three parts
- 3 tablespoons freshly squeezed lemon juice
- 3 tablespoons butter
- 2 tablespoons capers
- 1 cup dry white wine
- 2 tablespoons olive oil
- salt and pepper as you like
- 1 quarter cup flour
- 3 fourths tablespoon paprika
Take salt, pepper, flour and paprika and mix together and then cover chicken pieces in this mixture. Put olive oil into frying pan which is starting to get heated and then add only 2 tablespoons of butter. Fry chicken breasts to golden brown and then put into another recipient and keep warm. To make the sauce, add lemon juice and wine to pan with chicken dripping and slowly mix all together with a wooden spoon. Simmer for about two to three minutes on medium-high and then reduce to thicken sauce. When the sauce is thick, add in the other tablespoon of butter and stir and when melted, add capers. pour this sauce over chicken breasts and serve.

Tuscany Florence Cheesecake Recipes
- 8 eggs
- 3 pounds ricotta cheese ( 1 and a half kilos )
- 2 cups sugar
- 1 cup whole milk
- 3 ounces of any orange liquor
- 2 tablespoons of grated orange and lemon peel
- 1 tablespoon butter
- 1 fourth cup bread crumbs
Preheat oven to 350 F. Grease or put cooking paper into a spring form pan and cover with bread crumbs. Take a pan which is a little larger than the springform and fill it half way and put to boil. Put ricotta cheese into a blender and beat until all the lumps are gone. Add the eggs, milk and sugar and mix well until the texture is smooth. Add orange and lemon peels with orange liquor and hand mix well. Add this mixture to the springform and set into the larger pan with boiling water and bake in oven for about 75 minutes. Turn oven off without opening and let the cheesecake stand for an hour, then remove it, placing it so that it can continue to cool and then into the fridge.
