- 4 boneless chicken breasts ( sliced in half )

- 1 cup white cooking wine

- 4 ounces chopped and fried red peppers
- 3 fourths cup sage crumbed leaves

Flatten chicken breasts and put a thin layer of red peppers, sage and a slice of cheese. Roll each breast and hold it closed with either cooking string or toothpicks. Mix the flour, oregano, salt and pepper and cover the breasts in it. Heat the olive oil and fry the breasts. When they are golden, add the wine and simmer for about 12 – 15 minutes.
